Best Banana Bread Recipe

My favourite day of the year has finally arrived, the first day of spring is upon us here in the southern hemisphere yet winter’s chill still clings to the air. I love seeing the natural environment awaken during this time as the skies become lighter and the days longer bit by bit yet the lingering cold still beckons for winter woolies in the morning and comfort food. This transitional time of year calls for a special recipe, something warm yet light that combines flavours of both winter and spring: banana bread.

R E C I P E

1 1/2 cups of self raising flour

1 cup of caster sugar

1/2 cup of butter

1/2 teaspoon of salt

1 teaspoon of cinnamon

2 eggs

4 ripe bananas

Brown sugar for dusting

M E T H O D

Line a loaf pan with baking paper to ensure easy removal of loaf once baked

Preheat oven to 180 degrees celcius

In a mixing bowl cream sugar with butter, then add eggs. Be sure that the butter and eggs are at room temperature before use

Roughly dice bananas into bit sized pieces and mash together before thoroughly adding to mixture

Sift in flour, cinnamon and salt and stir until combined. Don’t overmix otherwise this could affect the load rising once in the oven

Pour blended recipe evenly into lined loaf pan and bake for 1 hour

Serve warm or chilled as the loaf can be kept well refrigerated
